I finally looked up how much a food truck really costs to start up
Saw a breakdown from a guy in Portland that said the average fully loaded truck runs like $80k to $120k, way more than I figured for something on wheels, anyone else get sticker shock when they actually checked the numbers?

My buddy in Austin went through this exact same thing last year. He found a used 2005 Step Van for $8k on Craigslist but then spent another $25k just gutting it, putting in a commercial hood, a three compartment sink, and plumbing. The health department made him redo his handwashing station layout twice, which ate up another month and $2k in pipework alone. Between permits, fire suppression, generator, and that first commissary lease deposit, he was at $42k before he made a single taco.

Man I hear that @grayh60, the hidden costs are always the killer. Nobody talks about how much time you lose just waiting on inspectors to show up or re-doing simple stuff that wasn't drawn out right the first time. It's like every little thing adds another week and another few hundred bucks you weren't counting on.
