Pro tip: a regular customer told me my truck's tacos were 'soggy' after 15 minutes in the container.

I started double-wrapping the tortillas in foil and a paper towel to absorb steam, and it fixed the whole thing. Anyone have a better trick for keeping takeout tacos from getting mushy?

Saw a guy on a cooking show say to pack the salsa and wet stuff separate. Let people build it at home. Your foil trick is smart though.

Packing the wet stuff separate sounds smart until you realize most people just want to open one container and eat. The real trick is using a sturdier base, like a thick tortilla or a layer of beans, as a barrier. That foil method works because it's a physical wall, not just hoping people will do extra assembly. Honestly, expecting folks to build their own taco at lunch is how you end up with a sad desk salad instead.
