I almost gave up on dried beans because of this simple error
I stopped buying canned beans and started cooking dried ones to save cash. But I rushed the soak time and they stayed tough for hours. Now I always soak them overnight, and they cook fast and cheap. Avoid my error - proper soaking turns dried beans into a real money saver.

Overnight soaking is key, but if you forget, a quick soak works too. Just boil them for a few minutes, then let them sit for an hour. I do this with kidney beans when I'm in a rush. Adding a pinch of baking soda can help soften them faster, especially for chickpeas. It cuts down cooking time and saves even more on gas or electricity. Properly soaked beans also digest better, so you get more nutrition from your cheap meal.

Yeah, the baking soda trick is a game changer! I tried it with chickpeas last week and they were so soft in half the time. @mia_campbell is right about it saving energy too, my electric bill thanks me. I usually forget to soak overnight, so the quick boil method is my go-to. For kidney beans, I add a bit of salt after soaking to boost flavor. Makes such a difference for weeknight dinners!

Honestly, the baking soda tip is a lifesaver for us forgetful types (looking at you, @the_ruby). I never remember to soak beans overnight, so my quick-soak game is strong. It's basically the only way I get dinner on the table.
