My cheap chili plan fell apart when I saw the price of a single bell pepper

I was at the grocery store in Omaha last week, ready to make my big pot of chili that usually costs about $8 total. A single green bell pepper was priced at $2.49, which is just crazy to me for one veggie. I had to change my whole recipe on the spot and use a can of diced tomatoes with green chiles instead, which was only 89 cents. Has anyone found a good, cheap swap for fresh peppers when they get too pricey?

That's brutal, I feel your pain completely. Bell peppers have gotten insane lately, it's like they're made of gold. The canned tomatoes with green chiles was a smart move, that's my go-to as well. Frozen pepper strips are another good backup, they're way cheaper by weight and you can just toss a handful in. Makes me miss summer when the garden ones are practically free.
