My neighbor in Phoenix showed me how to turn leftover rice into a whole new meal
She fried it with a couple eggs and some frozen peas from her freezer, plus a dash of soy sauce. It was a full dinner for basically nothing. What other cheap add-ins do you use for fried rice?

My mom always kept a bag of frozen mixed vegetables in the freezer for this. The little cubes of carrot and corn add color and a bit of sweetness. A spoonful of minced garlic from a jar makes a huge difference too. If I have a single green onion, I slice it thin and toss it in at the very end. That pop of fresh flavor really finishes the whole dish.

Honestly, my fried rice is basically a fridge clean-out project... last time I used up some weird lunch meat and it was kind of sad. A can of those little shrimp is my go-to cheap protein though, the kind that's already cooked. They're not fancy but they work. A tiny bit of sesame oil at the end makes it smell like a real restaurant, even if the rest of my ingredients are questionable.

Wait, you're adding the sesame oil at the end? I always fry the rice in it from the start... that way the flavor gets cooked in deep. For @rowan_black's shrimp, try tossing them in with the oil first to get a little sear, even if they're already cooked. It makes them taste less like they came straight from the can.
