From my kitchen, skipping the rice rinse is a hill I'll die on

My family's secret for decades has been to never rinse rice, claiming it locks in flavor and vitamins. Most cooks insist on rinsing to reduce starch, but our unrinsed rice gives a heartier texture in dishes like jambalaya. I've faced plenty of pushback from friends who say it's messy or wrong. How do you handle rice prep, and have you tried skipping the rinse?

I always rinsed rice until I tried making paella without rinsing. The grains held up better and absorbed the broth more fully. Who knew skipping a step could make such a difference?

Oh man, I had the exact same thing happen with risotto! I used to rinse the arborio rice like crazy, worried about the starch. But then I tried it straight from the bag, and that creamy sauce just came together so much better. It's wild how a "rule" we all follow can actually work against the dish. Totally get what you mean about the grains holding their shape while still soaking up all that flavor.
