My Sicilian vacation taught me that lemon zest beats juice in cooking every time.

Add the zest at the end of cooking to keep the bright flavor, just like the locals do.

Did you try it in savory dishes too? I always used just juice before but this convinced me.

Remembered ruining a whole pan of shrimp scampi by adding the zest with the garlic. Learned that timing the hard way.

Yeah the zest with garlic thing is a real trap. @gonzalez.wesley i get that, juice is safer but zest can work if you treat it like a garnish at the end.
