Am I the only one who thought a pellet smoker could match a proper offset for brisket bark?
Did a side-by-side test with a full packer on my Traeger and my old Oklahoma Joe, and the offset's bark was way thicker and had more flavor. Has anyone else found a pellet grill setting that actually gets close?

Yeah, I had the same issue. What worked for me was cranking the pellet grill to 275 for the last few hours, like @sarah_hart kinda said. That extra heat really sets the bark.

Honestly, my pellet grill gets a bark I'm really happy with. It just takes some messing with the temps and maybe a smoke tube. Guess it depends on what you're going for.
