Am I the only one who thought wrapping brisket in butcher paper was just a gimmick?
I finally tried it on my last cook in Kansas City and the bark stayed perfect while the meat got tender. Anyone have a go-to paper brand they swear by?

Ha, a gimmick! That's what I said until my last brisket came out like shoe leather. I'm a total convert now. I just grab the pink butcher paper from the hardware store, seems to do the trick!

Yeah, the shoe leather phase is a rough teacher. I mean, I fought the paper for so long thinking it was just for show. Then you try it once and it's like, oh, this actually just works. My stubbornness cost me a few good cuts of meat before I gave in. Now I'm just another guy quietly buying pink paper at the hardware store, no questions asked.
