Called BS on the foil boat method for brisket. I was dead wrong.
Been doing the full wrap with butcher paper for years on my offset stick burner. Saw a guy at a comp in Kansas City last fall using a foil boat on his flat and I thought he was nuts. Tried it on a 16 pound prime packer last weekend and that bark stayed rock solid while the flat stayed juicy. Anyone else have a technique they swore was garbage until they saw it work?

KC comp guy? That was probably Randy, he's been doing foil boats since 2018.

Yeah, "foil boats since 2018" sounds exactly like Randy. He's been at this longer than most people think, right? I remember seeing his early builds at a local meetup back then and they were already looking clean. He really figured out the whole foil wrapping thing before it got popular. Now he's the go-to guy for that stuff in KC, I feel like he's taught half the people in the scene at this point. His boats always turn out super sharp and consistent, which is hard to do with foil.
