Finally came around on wrapping brisket in butcher paper

I used to think foil was fine for the stall, but after seeing Franklin's video where he said paper lets the bark stay crunchy and I tried it on a packer last weekend, I had to admit he was right. The bark was way better than my usual foil boat method. Anyone else switch and never look back?

My buddy switched to paper last summer and won't shut up about it.

Am I the only one who felt like foil gave a steamed bark? @jenniferwelles, same thing happened with my buddy, once he tried paper he never looked back, crunchy bark for the win!
