Finally picked hickory over mesquite for a brisket cook
I always reached for mesquite because it's what my dad used, but after my last brisket came out too harsh, I switched to hickory for a 12-pound packer and got the best smoke ring and flavor I've ever had - has anyone else made that choice and regretted sticking with one wood too long?

Honestly, I was all mesquite till I tried pecan and never looked back.
