Hit cook #500 on my offset last Saturday and it snuck up on me
Fired up the old Horizon in the backyard here in Waco for what I figured was just another brisket, and my wife asked me how many cooks I had logged in my notebook. Counted them up and it came out to 500 exactly, which floored me since I only started writing them down after I ruined a packer in 2016. Flipping back through those pages, I can see every time I messed with the fire management, every rub I tried and dropped, every time a pitmaster at a comp in Llano gave me a tip that actually worked. The cooks from my first two years all look the same, then somewhere around number 180 the notes get shorter and calmer. Curious what number you all are at, and did you keep any kind of log or did you just wing it?
500 is a serious milestone. I stopped counting around 300 but I still write down temps and wood splits in a cheap spiral notebook. Without notes I'd never remember which tricks actually stuck.
