Wait, you mean you don't need to wrap it at all? What changed your mind about it?

@brookep27 definitely knows what's up with that method. Once I started wrapping later I realized the bark sets way better and you don't get that soggy mess. Took me a couple of ruined briskets to figure out it's all about timing not just wrapping at a random hour. Now I wait til the stall is really dragging before I even think about the paper. Huge difference in the final texture and everyone at my cookouts noticed.
