Saw a pitmaster in Memphis using a garden hose and it got me thinking

Stopped at a little spot off Lamar Avenue last month, guy had a 40 year old offset rig and he was spritzing with plain water from a garden hose. Not some fancy spray bottle or mop sauce, just a nozzle set to mist. I mean, I've been chasing these complex vinegar mixes for years, but his bark came out perfect. It made me wonder if we overthink the moisture game when simple water does the job fine. Has anyone else tried cutting back to just water and seeing better results?
