Temp swings on my offset had me about to quit smoking

I spent 6 hours fighting my Oklahoma Joe offset to keep it at 225 for a pork shoulder. Turned out I was dumping way too much fuel at once and choking the fire. A guy on a YouTube channel called Mad Scientist BBQ showed me the minion method and it held steady for 4 hours without touching it. Anyone else have a lightbulb moment that saved your sanity with charcoal?

Started blocking the firebox from the intake side with a piece of scrap steel. Cut a rectangle about 4x6 inches and just set it in front of the intake to baffle the air flow. That cheap trick fixed my temp swings better than any fancy mod I ever bought. Made me realize half the battle with offsets is just figuring out how to trick the air into moving where you want it to go instead of where it wants to go naturally.

Man, isn't it funny how the simplest fixes often work better than anything you can buy? I did the same thing with a chunk of sheet metal and it completely changed how my offset runs.
