TIL keeping your smoker too clean actually messes up the bark formation
I stripped my WSM down to bare metal after 3 cooks and the next 2 briskets came out with zero crust, so please stop scrubbing that seasoning off thinking it helps.

Disagree hard on this one. I scrub my WSM clean after every cook and my bark comes out like crunchy glass every time. Maybe your issue was letting the seasoning get too thick and flake off or not running the temp low enough to let the smoke stick. Bare metal just needs a quick oil spray and a couple hours of smoke before the meat goes on.

Crunchy glass" is wild lmao @the_miles are we really out here chasing bark that shatters on bite? I just want meat that pulls apart not eats like a cracker.
