Took forever to get my pit temp to stop lying to me
Ran into this weird issue where my smoker's built in thermometer was reading 250 but the meat was crawling along. Turns out the probe was sitting right above a hot spot near the firebox, off by almost 40 degrees. I wasted three weekends chasing my cook times and pulling my hair out before I got a cheap wireless probe and put it at grate level next to the meat. That one move changed everything, and now I trust the remote probe over the factory dial every time. Anyone else have a smoker that fibs about its temps, or am I just lucky?

The grate level probe is the only way to know what's really happening.
